Breakfast Bites: How a Simple Idea Became a Metro Staple

Some of the best ideas at Metro don’t come from a whiteboard. They come from conversations. Coffee-fueled talks about food, baking, and how to make something better, easier, and more fun for the people who walk through our doors every day.

That’s exactly how Breakfast Bites were born.

It Started With Dough and a Good Question

Sean had been tossing around ideas with friends about different breakfast options Metro could make. Not another sandwich. Not something messy or slow. Something better. Something that actually fit real life.

Then Sean met Larry, a professional baker known as the Dough King. Larry was talking about these open-faced empanadas he made, flaky, simple, packed with flavor. That was the spark. Sean immediately wanted to see what that concept could look like for breakfast.

Next thing you know, they were in the bakery together. Testing. Tweaking. Baking. Eating. Repeating.

Turning an Idea Into Breakfast

Working side by side, Sean and Larry developed what would become Breakfast Bites. They landed on three core recipes that hit different cravings without overthinking it.

A sausage, egg, and cheese version that’s classic and comforting.
A bacon, egg, and Swiss option that feels a little elevated but still familiar.
And a South American-inspired bite with scrambled eggs, onions, and peppers that brings a little heat and flavor to the table.

The goal was simple. Make something fast, delicious, and easy to grab. Something you could eat one of or three of, depending on how hungry you were. No one in Casper was really doing that in a clean, simple way. So Metro did.

Simple Name. Solid Idea.

Naming them didn’t require much debate. They were for breakfast. They were bite-sized. Breakfast Bites.

That’s kind of Metro’s thing. Keep it simple. Let the food speak for itself.

These little flaky pastry pockets are different from a bagel sandwich or your standard breakfast sandwich. They’re lighter. Faster. Easier. You can pair them with salsa or eat them straight up. No rules. No mess.

Made for Everyone

One of the main rules at Metro has always been this. Metro is for everybody.

Workers. Moms. Kids. Artists. Cowboys. Punks. Business folks. Bankers. Everyone.

Breakfast Bites had to fit that rule. Small enough for a kid. Filling enough if you grab a few. Easy enough for someone running late. Comfortable enough for someone hanging out.

That’s why they work. They fit into real life.

The Anti-Breakfast Breakfast

In a town full of the same old breakfast options, Breakfast Bites kind of broke the mold. They don’t try to be fancy. They don’t try to be traditional. They just work.

Now people come in specifically for them. They grab their usual number. It’s part of the routine. We’re good with that. If you’ve never had a Breakfast Bite, or if you’ve seen them and never pulled the trigger, this is your sign. Take a shot. Try one. Or three. Change up your morning.

Pair it with your favorite Metro coffee, a Bullitt, or a smoothie. Whatever gets you moving.

In a world of same old, we like to think there’s still room for something fresh and cool.

Until then, stay chill.
